Avocado Salad with Lime Vinaigrette


I might not like to cook as much as my sister does but, when I do, my guest (in other words, boyfriend) eats every bite. This avocado salad is perfect for busy people who don't like preparing complicated recipes and who prefer to have a diet low on carbs.

Here are the ingredients for two:

A small avocado
A small green leaf lettuce
One or two tomatoes
A cup of sliced onion
1/4 cup of cilantro
The juice of two limes
Salt and ground black pepper to taste
A spoon on mustard sauce
A spoon of olive oil

 


Mix the juice of the two lemons, the olive oil and the mustard and stir until it is uniform. If don't like the strong taste of onions, marinate the onion in the lime, olive oil and mustard mix. Add salt and black pepper to taste.

Wash the lettuce, tomatoes and cilantro, peel and slice the tomatoes (my boyfriend has a hard time digesting tomato skins), chop the cilantro and dice the avocado.

Place the lettuce at the bottom of the salad bowl and then put the avocado, the tomato and the onions on top. Pour the juice in which you had marinated the onions and sprinkle the cilantro.

If you are not a vegetarian, you can serve with grilled chicken. How about that, sis? Not too bad, right?
