I was at the store with my kids today. We shop at BJ's and Whole Foods.
We were at BJ's and it was really difficult to keep my kids' attention away from the baked goods they offer at the bakery department... Colorful cookies and cupcakes that I do NOT give to my kids because we chose to be a gluten free family. Try explaining that to a 2 and 6 year old!!
6 year old: I want cookies
2 year old: cookies
Me: no kiddos, not today.
Second time
6 year old: mommy, I want cookies, pleeeeeease
2 year old: cookies, peeeeeease
Me: sorry babies, I can't buy those

.
Seventh time
6 year old: I said I want cookies!!!
2 year old: cookies!!!! (This time in a very deep voice like he's either Cookie Monster or James Earl Jones asking for cookies). Something finally clicked. I do not have to buy cookies, I can make them with them and have some fun!
Me: We are not buying those cookies because we are baking our own M&M cookies, yay!!!! (That's what they saw at the store).
I know, M&M is candy. To me, it doesn't matter. I get them to eat healthy through our other ingredients. At some point, I will switch the M&M for dairy free chocolate chips, or plain nuts.
This is what we used:
2 cups gluten free flour
2 single servings vanilla complete shakes (you can get them here vandervoort.juiceplus.com or m-l8.juiceplus.com)
2 eggs
1 tsp vanilla extract
1/4 cup maple syrup (or 3/4 cup brown sugar)
3/4 tsp baking powder
1/2 cup unsalted butter softened
A bit of salt
M&M (I used the one with peanuts)
Preheat oven at 375 degrees
Mix the dry ingredients (not the M&M).
Mix the wet ingredients.
Then slowly incorporate the dry ingredients in the wet ones. (I did not use a mixer; my six year old and I did all the mixing ourselves)
While we were mixing, my two year old was on M&M quality control. They passed the inspection!!
The dough will be firm at the end.
Wet you hands to be able to form 2 inch balls with your hands and put them on a baking sheet. Spray oil on the baking sheet or use parchment paper.
Put the balls about two inches apart of each other and flatten a bit onto the sheet.
I let my kids put three M&M per cookie.
I got two baking sheets, around 16 cookies total.
Final ingredient, after the cookies were ready to go in the oven, my 2 year old sneezed on them. It was such a funny moment!!!
Put in the oven for 12 to 15 minutes.
