Since I started my Juice Plus journey, my body craves for fruit and vegetables....it had never happened before! Today, I decided to prepare this simple but tasty recipe simply because I have always loved the taste of feta cheese. Where I live (MedellĂn-Colombia), goat cheese is not very popular but I managed to buy some for two of my recipes this week. The rest of the ingredients are very easy to find. Here they are (serving for two):
Feta/goat cheese
2 tomatoes
1 cucumber
Green or black olives
1 onion
5 spoons of olive oil
The juice of one or two lemons
Cilantro
1/2 tea spoon of sugar
Black pepper and salt to taste
Preparing this salad is no rocket science. It is up to you if you want to peel the tomato skins and if you want to seed the cucumber. I do it because they are easier to digest that way. Cut and slice the tomatoes, cucumber and onion, wash the green olives and toss them all in a salad bowl with the goat cheese.
The dressing is also very easy to prepare. Mix the juice of one or two lemons, the 5 spoons of olive oil, the sugar and some cilantro. Mix well. Dress the salad before serving.
My boyfriend asked "Aren't we going to eat avocado today?" I said, "Why not!" so this ended up being a Greek Salad with Avocado. Instead of simply adding grilled chicken, I decided to cook the chicken in chicken broth, with some curry powder and some curcuma. It was delicious!
We might not always have all the ingredients that cookbooks include, but we can be a little creative and add fruits of our land.
