Lentil Vanilla Complete Blondies


I love cooking (my sister not so much - but she loves eating!! if that counts), and because of that, I am always experimenting with new recipes trying to find ways to get my kids to eat better. 

I love hiding veggies in meatballs, shakes, granola bars... they won't eat raw veggies, steamed or entirely cooked, (well, maybe one of the two would) but the rule is that most probably, they won't. I am over the moon excited that I found JP+ gummies packet with thirty fruits and vegetables to give to my children. 

The gummies are micro-nutrients that fill the gap of what we eat and what we should eat. We still, however, need to eat fruit and vegetables. And we want to make those meals count. 

One of the recipes that I stumbled upon is lentil blondies. 




Protein packed!!! But why not add even more nutrients... Those we get from yucca, mushroom, amaranth, broccoli sprout, chickpea, pea, rice, rice bran, pumpkin, and pomegranate (I might be missing a few)...That's why I added Complete Shakes from Juice Plus + to the recipe. My kids loved them! of course, hubby approved too.




With that, let's start. Preheat the oven at 350 degrees and gather the following ingredients:


  • 3 Scoops vanilla Complete shakes (you can get them in our websites http://m-l8.juiceplus.com/us/en  and  http://vandervoort.juiceplus.com/us/en)
  • 1 1/2 Cups of lentils (already cooked and pureed)
  • 1/3 cup of maple syrup
  • 2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 cup chocolate chips (I used dairy free)
  • 1/4 cup coconut oil (I used melted margarine since I forgot to buy the coconut oil)
  • 1/2 tsp salt


Mix all the ingredients except the chips. Add half the chips last and put in a baking pan. Once in the pan, put the rest of the chips on top. Bake for 15 minutes or longer if the pan is smaller than 8 x 8.
