I know, I know! I had not written anything in days. It is not that I am starving myself to death, it is simply that I am not intending to take pictures and write about everything we eat.
I started exercising again! Yay! My body told me "Girl, your diet is great but how about you start moving your booty as well." Well, I signed myself up for some hip hop dance lessons and started doing workout videos (I'm considering going back to the gym to lift weights...still thinking!)
Going back to the title of this entry, green beans, carrots, and avocado. Avocado again? Yes, it will probably be in many of my recipes so bear with me, please.
What ingredients did I use? Very simple:
1 cup of green beans
1/2 cup of carrot
1/2 onion
1 tomato
1 small avocado
5 small radishes
Cilantro
The juice of 1 lemon
Salt and black pepper to taste
Olive oil
Enjoy!!!

I love to marinate the onion in the lemon and olive oil (add salt and black pepper). This time, I also marinated the radish.
Cook the green beans and carrot in a large pot of boiling salted water for 5 minutes or until you feel they are tender. Add them to the salad bowl, add the tomato, a little bit of cilantro and decorate with avocado. This salad is now ready to eat!!!
